			<content:encoded><![CDATA[<br/><p>The most important part of sushi is the rice, since it makes up so much of the dish. It can&#8217;t be too soft or too hard, too dry or too moist. The rice also needs to be seasoned properly to complement what it&#8217;s paired with.</p>
<p>For lunch today, I prepared Inari sushi. Inari is Japanese for their sweetened tofu. The tofu are little pockets that are stuffed with sushi rice. Inari sushi is a great meal for lunch since they&#8217;re small two-bite pieces that can&#8217;t get damaged in the transportation process (unlike my sushi last time which got crushed in the transportation process :( ). To make it a little more interesting, I added some wakame salad before stuffing the pockets with rice. The sushi rice is seasoned with sushi vinegar and lightly with <em>aji nori furkikake</em> (seasoned seaweed &amp; sesame mix).</p>

			<content:encoded><![CDATA[<br/><p>Got up bright and early at 6:40 am as usual, and heated up the leftover sushi rice that I made yesterday. After cooking the rest of the radish cake for breakfast, there was a bit of time left to roll some maki/kimbap hybrid. The fillings were more kimbap style, but the rice was sushi rice. I rolled them in three different ways:</p>
<ul>
<li><em>nori </em><em>makizushi</em> &#8211; wrapped in nori</li>
<li><em>uramaki</em> &#8211; wrapped in nori with rice on the inside</li>
<li>rice paper <em>makizushi</em> &#8211; wrapped in rice paper</li>
</ul>
<p>and prepared a whole bunch of ingredients late last night to put in:</p>
<ul>
<li> kimchi (pickled cabbage)</li>
<li>tomago (sweet egg)</li>
<li>hiyashi wakame (seaweed salad)</li>
<li>spinach</li>
<li>vegetarian chả lụa (Vietnamese sausage)</li>
</ul>
<p>I was also going to make some inarizushi (the stuffed tofu pockets) but I figured I&#8217;d be pretty full from all the maki that I had made.</p>

<p>For dinner, I made cauliflower casserole (finally finishing off the cauliflower sitting around in my fridge). All at the same time I was watching <a href="http://en.wikipedia.org/wiki/Glee_(TV_series)">Glee</a> which is a hilarious show I just started watching on the weekend. Following the recipe I found <a href="http://southernfood.about.com/od/cauliflower/r/bl30118j.htm">here</a>, but used mozzarella (I forgot to add the parmesan) and didn&#8217;t add breadcrumbs, because we didn&#8217;t have any in the house. It was an extremely simple straight-forward dish, but the results were SOOO GOOD. Can&#8217;t wait to finish it off tonight!</p>

<p>Yesterday, for lunch I made some extremely simple salad rolls. Lettuce, vegetarian Vietnamese sausage and banana peppers all rolled up in rice paper. I also added some rice to the mix and created some sushi/salad roll hybrids. And lots of rice left over for some more sushi! Pretty healthy, although it was a little bland :( some soy sauce would have fixed that problem.</p>

<p>For dinner I wanted something quick so I could head to the gym so I just ate rice with some stir-fried cabbage similar to earlier (finally finishing off all that cabbage that was left in my house).</p>
<p>I promise that I&#8217;ll have something more interesting tomorrow!</p>
