			<content:encoded><![CDATA[<br/><p>A few days before going to watch Disney/Pixar&#8217;s new movie <a href="http://disney.go.com/disneypictures/up/" target="_blank">UP!</a> (which is a really good movie by the way).  I went through a few of Pixar&#8217;s other older movies, including the great food movie called <a href="http://www.pixar.com/featurefilms/rat/" target="_blank">Ratatouille</a>.</p>

<p>The film is about a rat called Remy which has taste for cooking and aspires to become a great chef.  The climax of the movie is where Remy creates a dish based on <a href="http://en.wikipedia.org/wiki/Ratatouille" target="_blank">ratatouille</a> and serves it to the critical food critic, Anton Ego.</p>
<p>Now, I&#8217;ve never had ratataouille before, but apparently it&#8217;s a simple dish that&#8217;s commonly cooked at home in France.  The updated version used in the film was designed by Thomas Keller, a famous chef who owns French Laundry in Yountville, California.  This version is called <a href="http://en.wikipedia.org/wiki/Confit_byaldi" target="_blank">Confit byaldi</a>, which is made up of sliced vegetables instead of roughly chopped up like in ratatouille.</p>
<p style="text-align: left;">The resulting dish is a beautiful combination of colours and flavours.  I have yet to get around to making it (since it takes quite a bit of effort) but the recipe is available <a href="http://www.nytimes.com/2007/06/13/dining/131rrex.html" target="_blank">here</a> from the NY Times.</p>
