Got up bright and early at 6:40 am as usual, and heated up the leftover sushi rice that I made yesterday. After cooking the rest of the radish cake for breakfast, there was a bit of time left to roll some maki/kimbap hybrid. The fillings were more kimbap style, but the rice was sushi rice. I rolled them in three different ways:
- nori makizushi – wrapped in nori
- uramaki – wrapped in nori with rice on the inside
- rice paper makizushi – wrapped in rice paper
and prepared a whole bunch of ingredients late last night to put in:
- kimchi (pickled cabbage)
- tomago (sweet egg)
- hiyashi wakame (seaweed salad)
- spinach
- vegetarian chả lụa (Vietnamese sausage)
I was also going to make some inarizushi (the stuffed tofu pockets) but I figured I’d be pretty full from all the maki that I had made.

For dinner, I made cauliflower casserole (finally finishing off the cauliflower sitting around in my fridge). All at the same time I was watching Glee which is a hilarious show I just started watching on the weekend. Following the recipe I found here, but used mozzarella (I forgot to add the parmesan) and didn’t add breadcrumbs, because we didn’t have any in the house. It was an extremely simple straight-forward dish, but the results were SOOO GOOD. Can’t wait to finish it off tonight!
