Day 4 of 28: Udon & Squash Soup and Asian-Style Gnocchi

This morning I was hoping to make some Omurice with the leftover rice I had sitting around, but my dad had already used the rice to make fried rice, so that’s what I had for brunch. I guess I’ll save the omurice for another day.

For dinner, I noticed there was some leftover squash (kabocha) soup and half a package of udon noodles in the fridge. So I felt like this would be a great combination. Taking what was already in the soup: squash and snow fungus, and adding my own touches to it – some cayenne powder and king mushrooms. Squash soup with a hint of curry or pepper is delicious!

I also did some late night cooking and prepared asian-style gnocchi for lunch tomorrow. A combination of peppers, king mushrooms, black bean sauce, and my gnocchi that I cut in half and boiled for a little longer. The gnocchi was much lighter and tasted a lot better this way.

I’m slowly finishing up the remaining groceries in the fridge, but there are at least 6 banana peppers still in the fridge. Anyone have suggestions as to what I could make with them?
